Oatmeal Raisin Muffins

A Recipe for today...


Raisin Oatmeal Muffins

1 cup quick cooking oats
1 cup buttermilk
1 egg
1/2 cup brown sugar, packed
1/2 vanilla extract
1/2 cup melted butter or oil
1 cup sifted all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 to 3/4 cup raisins (I soak mine in warm water for a few minutes and drain)

Preheat oven to 400F.

*You can substitute buttermilk, by making sour milk (1Tbsp vinegar and add milk to make a cup)

1. Pour buttermilk over oatmeal and allow to soak while mixing dry ingredients. Add egg, brown sugar and vanilla extract after soaking oatmeal.

2. In a medium bowl, combine dry ingredients and mix together. 

3.  Pour in melted butter or oil to dry ingredients and stir.  Add raisins.

4.  Combine all ingredients and stir together just until mixed.

5.  Bake for about 15-20 minutes.

This recipe makes just under a dozen for us. 
I have also made this recipe with coconut oil instead of butter and they are wonderful!
